Your Food Hygiene Rating is based on 3 key elements:

  • Hygiene Practices – how food is prepared, cooked, cooled, reheated, and stored

  • Structure – assesses the cleanliness, layout, lighting, ventilation, facilities and management of pests

  • Confidence in Management – how your business manages and records food safety such as cleaning records and how well staff are trained in food safety and how well they follow these guidelines on a daily basis.

It is important you have recognised these 3 key elements and are up to speed with paperwork, team training and pest management to avoid any issues with your Environmental Health Officer.

Did you know, it is now a legal requirement for all food businesses to have a written policy for food safety management procedures, based on the principles of HACCP (hazard analysis and critical control points) in place.

For smaller takeaways and food-businesses, the Food Standards Agency offer the Safer Food Better Business Pack.
