HACCP & Policy Development
If you are running a food business you are legally required to have a written food safety management system in place to ensure food is safe for your customers to eat.You should think about what might go wrong with the food that you sell and what you must do to ensure it is safe for your customers. You should put in place a system based on food safety practices that you are familiar with, in line with general hazard analysis and critical procedures principles, (HACCP). The level of documentation required will depend on the nature and size of your business.

 

‘Hazard Analysis Critical Control Point’ is a Food Safety Management System used to ensure that the food you serve to customers is safe to eat.It identifies what (and where) things can go wrong, and where it is critical to develop control procedures. It is a legal requirement to implement a Food Safety Management System based on the seven principles.

Risk Assessment
The completion of risk assessments is an important step in protecting the Health & Safety of your workers and your business, as well as complying with the law.

 

A risk assessment involves examining your business to establish what could cause harm to either your employees or the general public and then deciding whether you have taken sufficient precautions to prevent this from occurring, or whether further controls are required. Food Allergen Advice
The new EU food labelling laws are here. It is vital that food businesses acknowledge customers with allergies and intolerances so if you are a food business operator then you need to know about the EU Top 14 Allergens and all the aspects of the new law: for example, you can no longer state that you don’t know if an allergen is present and traces of any of these 14 defined allergens must be labelled clearly even on loose foods. Every food business operator is affected from restaurants and cafes, street vendors, to catering companies all have to comply, and if they don’t, it’s a £5,000 on-the-spot fine.
