To find a trainer with authenticity, genuine passion for the topic and who is able to relate the theory to real practical examples is so important. I had confidence that Sylvia would be able to handle our learners and had the background expertise to create a culture of respect in our training room. The team all commented on the ease with which the training flowed and enjoyed the variety of approaches Sylvia adopts.
The entire syllabus was tackled, but this is not ‘text book’ training; we applied the topics to our environment and explored how the subjects would impact our workplace directly. This really helped to embed the learning and resonated with the team in a positive way and we gained a very high pass rate with Merits. Sylvia initially worked with us in an auditing capacity, and assisted with some remedial training for us back in December 2012, she has now delivered out L3 training in August 2013.

I recently spoke at the Guardian’s “How to Start a Supper Club, Home Restaurant, or Pop-Up” Masterclass. In case you missed the event, this blog covers the most important pointers I shared on the day. Supper clubs, pop-up restaurants, and home restaurants have all been increasing in popularity since around the early 2000s. The success of such models is largely tied to the rise of digital communication and social media, since diners typically use these mediums to learn about and make reservations at these exciting new eateries. It’s now easier than ever to set up and promote one of these clubs or restaurants. Social media has made people more aware and accepting of unconventional dining options, and a good number of those who have set them up have since launched successful culinary careers. The news and social media are full of stories on poor food hygiene at the moment and no food business is immune to bad press, including those run by celebrity chefs, like Heston Blumenthal who had an outbreak of food poisoning at his restaurant; Jamie Oliver’s deluxe London butchers closed after health inspectors found mouse droppings, out-of-date wagyu beef and mouldy carcasses and even Marco Pierre White’s flagship restaurant in Birmingham was given a zero food hygiene rating from the environmental health officers. Norovirus is a very contagious virus and is sometimes known as the winter vomiting bug, is the most common stomach bug in the UK. You can get norovirus from an infected person, contaminated food or water, or by touching contaminated surfaces. The virus causes your stomach or intestines or both to get inflamed (acute gastroenteritis). This leads you to have stomach pain, nausea, vomiting and diarrhoea. Anyone can be infected with norovirus and get ill but it can be serious for the young and the elderly. There’s no specific cure for norovirus so you have to let it run its course. It’s usually mild and shouldn’t last more than a couple of days. The period from when you’re infected to when you start to show symptoms (the incubation period) usually lasts 12-48 hours, during this time, you maybe infectious to other people. The best way to help prevent norovirus is to practice proper hand washing and general cleanliness. There are at least 25 different strains of noroviruses known to affect humans. They’re the most common cause of stomach bugs gastroenteritis in the UK. They’re also known as small round structured viruses (SRSV) or Norwalk-like viruses. Each year, it’s estimated that between 600,000 and 1 million people in the UK catch norovirus. Preventing norovirus spreading Norovirus is easily spread. If an infected person doesn’t wash their hands before handling food, they can pass the virus on to others. You can also catch it by touching contaminated surfaces or objects. Food Poisoning usually occurs within one to 36 hours of eating poisonous or contaminated food. The symptoms normally last from one to seven days and include one or more of the following symptoms: abdominal pain, vomiting, diarrhoea, dehydration and fever, the worst thing that can happen is DEATH! It’s difficult to know exactly how many people get food poisoning because mild cases often go unreported. However, the Food Standards Agency estimates that food poisoning affects up to 5.5 million people in the UK each year, those most at risk include young children, the elderly, pregnant women and people who already ill or recovering. The main reasons for food poisoning are ignorance, negligence, poor management and supervision of food handlers and a failure to implement good working practices. This can be prevented by ensuring good effective instruction and training of food handlers who are potentially the most serious hazards in a food business. As a food hygiene expert working undercover for ITV and Channel 4 for several years I probably would not eat in half the places I have visited due to poor working practices which is a shame as food safety and hygiene in my opinion is common sense. Most food business operators think it is very easy to open up a food related business but often they really don’t consider the importance of a food safety management system (HACCP). The initial outlay to set up such a system and train their staff seems an unnecessary expense to a new business especially when they see the priority being marketing their new business and generating turnover. Unfortunately, businesses like these think they know it all, it won’t happen to them….but how wrong they are! Did you know, for example, that getting Food Safety and Health & Safety wrong can lead to £20K or unlimited fines or, in the most extreme cases, a 2 year jail sentence – and obviously, the end of their business. It just takes one case of food poisoning to shut your business down, you just have to read the press to hear about the latest cases.
